Ingredients

Sweet potatoes, peeled and chopped

White onion, diced

Olive oil
1 tsp
Extra-lean beef mince (5% fat) or plant-based alternative
250 g
Onion powder
1 tsp
Smoked paprika
1 tsp
Low-fat cottage cheese
300 g
Tenderstem broccoli
200 g
Chilli flakes
Sea salt
Method - Prep
- Preheat the oven to 200°C (180°C fan).
- Peel and chop the sweet potatoes.
- Dice the onion.
Method - Cook
- Place the sweet potato onto a baking tray and roast for 25–30 minutes, or until soft and lightly golden.
- Heat the olive oil in a large frying pan and gently cook the onion for 5–6 minutes until softened.
- Add the beef mince and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the onion powder, smoked paprika, and a pinch of sea salt. Cook for a further 2–3 minutes.
- Steam or boil the Tenderstem broccoli until tender-crisp.
- Divide the roasted sweet potato and broccoli between two bowls.
- Top with the smoky beef mince mixture.
- Add half of the cottage cheese to each bowl.
- Finish with chilli flakes and an extra pinch of sea salt if desired.
