Mushrooms, sliced

Black beans, drained and rinsed

Method - Cook
- Preheat the oven to 180°C (160°C fan).
- Cook the sliced mushrooms in a non-stick frying pan until softened and any moisture has evaporated.
- In a large bowl, whisk the eggs, then stir through the cooked mushrooms, feta, black beans and cherry tomatoes.
- Pour the mixture into a deep, round non-stick baking dish.
- Bake for 18 minutes, or until the omelette is golden and firm in the centre.
- Slice into wedges and enjoy warm, or allow to cool and refrigerate for a delicious make-ahead breakfast or lunch.
