Ingredients

½ punnet frozen strawberries

150 g

Greek yogurt

3 tbsp

Light coconut milk (for strawberry layer)

100 ml

Vanilla protein powder

1 tbsp

Frozen banana, chopped

Ice cubes

3

Light coconut milk (for matcha layer)

100 ml

Matcha powder

1 tbsp

Maple syrup

2 tsp

Blueberries

150 g

Water

3 tbsp

Method - Prep

  1. Blitz the frozen strawberries, Greek yoghurt, light coconut milk, and vanilla protein powder until smooth. Pour into your serving bowls or a container and freeze until firm (about 20–30 mins).
  2. Blitz the frozen banana, ice cubes, light coconut milk, matcha powder, and maple syrup until smooth and creamy. Spoon on top of the frozen strawberry layer and freeze again until set.

Method - Cook

  1. For the compote, add the blueberries and water to a small pan. Crush gently with a fork, leaving some berries whole. Bring to the boil, then reduce and simmer for a few minutes until slightly thickened.
  2. Remove from the heat and let it cool completely. Spoon over the smoothie bowl just before serving.
