Ingredients

Cooked chicken breast, shredded

400 g

Red cabbage, finely shredded

300 g

White cabbage, finely shredded

30 g

Carrots, grated

100 g

Large red pepper, finely sliced

Spring onions, finely sliced

Fresh coriander, roughly chopped

Unsalted mixed nuts, roughly chopped

0% Greek Yoghurt

200 g

Juice of 1 lemon

Extra virgin olive oil

1 tsp

Honey

2 tsp

English mustard

1/4 tsp

Salt and freshly ground pepper

to taste

Water

1-2 tbsp, if needed

Method - Prep

  1. In a small bowl, whisk together the Greek yoghurt, lemon juice, olive oil, honey and English mustard. Season with salt and freshly ground black pepper. Add a splash of water if you’d like a thinner consistency.
  2. Add the red cabbage, white cabbage, grated carrot, red pepper, spring onions and coriander to a large serving bowl.
  3. Add the shredded chicken and pour over the dressing. Toss until everything is evenly coated.
  4. Sprinkle over the chopped mixed nuts just before serving for extra crunch.
