A high-protein, crunchy chicken salad packed with colourful vegetables and finished with a light creamy honey mustard dressing.
Ingredients

Cooked chicken breast, shredded
400 g
Red cabbage, finely shredded
300 g
White cabbage, finely shredded
30 g
Carrots, grated
100 g
Large red pepper, finely sliced

Spring onions, finely sliced

Fresh coriander, roughly chopped

Unsalted mixed nuts, roughly chopped

0% Greek Yoghurt
200 g
Juice of 1 lemon
Extra virgin olive oil
1 tsp
Honey
2 tsp
English mustard
1/4 tsp
Salt and freshly ground pepper
to taste
Water
1-2 tbsp, if needed
Method - Prep
- In a small bowl, whisk together the Greek yoghurt, lemon juice, olive oil, honey and English mustard. Season with salt and freshly ground black pepper. Add a splash of water if you’d like a thinner consistency.
- Add the red cabbage, white cabbage, grated carrot, red pepper, spring onions and coriander to a large serving bowl.
- Add the shredded chicken and pour over the dressing. Toss until everything is evenly coated.
- Sprinkle over the chopped mixed nuts just before serving for extra crunch.
