Ingredients
Serves 1
Large egg
1 egg
0% Fat Greek yogurt
4 tbsp
Self raising flour (or rolled oats blitzed to a flour)
50 g
Vanilla or blueberry protein powder

Fresh or frozen blueberries
g
Honey or maple syrup
1 tbsp
Vanilla extract
1 dash
Lemon zest
1/2 lemon
Method - Prep
- Preheat your oven to 180°C / 200°C fan, or set your air fryer to 150°C.
- In an oven-safe bowl or small baking dish, whisk together the egg, Greek yoghurt, flour, protein powder, honey, vanilla extract and lemon zest until you have a smooth, thick batter — think cake mix rather than crepe batter.
- Fold in most of the blueberries gently, then dot the remaining few on top so they sit proud and burst as they bake.
Method - Cook
- Bake in the oven for 15 minutes, or air fry at 150°C for 10 minutes, until the top is golden and the centre is just set with a slight wobble.
- Leave to cool for 5 minutes as it will continue to firm up as it rests. Eat straight from the bowl with a drizzle of maple syrup or a spoonful of cold Greek yoghurt.
