Healthy Tuscan-style chicken
High in protein and fibre-rich, this creamy, dairy-free Tuscan-style chicken is made with a blitzed silken tofu sauce, butterbeans, cherry tomatoes and spinach.
Ingredients
Serves 4
Silken tofu
300 g
Sea salt
1 pinch
Dried Italian herbs
2 tsp
Nutritional yeast (optional)
1 tbsp
Plant-based milk (e.g. almond)
1/2 pint
Olive oil
1 tsp
Banana shallots, diced

Garlic clove, minced

Butterbeans, rinsed and drained
1 tin
Cherry tomatoes, halved
300 g
Chicken breasts (or plant-based chicken)

Fresh spinach, shredded
2 handfuls
Method - Cook
1. Blitz the 300 grams silken tofu with the sea salt, dried Italian herbs, nutritional yeast (optional), and the milk in a blender until smooth and creamy. Set aside.
2. Heat the olive oil in a large pan over a medium heat. Add the shallots, and cook until softened, about 5 minutes.
3. Add the garlic and beans. Stir in the garlic clove, and cook for 1 minute, then add the 1 tin butterbeans, and the cherry tomatoes. Cook for a further 2 minutes.
4. Pour in the blended sauce and add the 4 chicken breasts (or plant-based chicken). Cover and simmer on a low heat for 20 minutes, or until the chicken is cooked through. If using cooked chicken or plant-based mince, simmer for just 10 minutes.
5. Stir through the two large handfuls of fresh spinach, and cook for 1-2 minutes until wilted. Season to taste and serve.
